It can be so easy to get wrapped up in our day to day lives, even when we are trying to slow down. One month rolls into the next and before you know it we are into April and nearly a third of the way through the year!
With this in mind, I wanted to document some of my favourite memories for the past month right here, so I can pop back and see what we’ve been up to, especially as my three are getting older and more independent.
This month was the month I started back at the garden centre. And a return to making soups weekly. We make all the soups we serve it the tea room fresh and then freeze them down so that we always have a selection of homemade soup to offer each day. One of the most popular and my favourite to make is Leek and Potato Soup.
Soup at this time of year can be so comforting and warming, perfect for when the weather decides to go from nearly Summer back to the depths of Winter.
Restating cooking at work always gets me in the mood to try some new recipes out at home. My three are usually ok with trying new recipes, thel love giving me their honest opinion too!
We love mexican food, especially fajita’s and taco’s so I decided to give The Pioneer Woman’s Turkey Taco’s a go. They are really quick to make and super tasty. The younger two weren’t as keen on them as the rest of us but will try again soon.
Simply by chance whilst doing the weekly shop I stumbled across TGI Friday’s Long Island Ice Tea. Perfect for a Spring evening
I had a good month book-wise. I seemed to get back into the swing of reading. My reading pattern varies over the year, I tend to read more during the winter and summer months but now that I also listen to books through audible, I can read quite a few more. My choice of music is usually dictated by my children, the eldest especially. When he’s in the car with us, which is becoming rarer now that he’s working, he takes control of the music and although some aren’t my taste. Most are.
